When I need (literally need) to eat something sweet, but the pantry shows no sign of interesting items to satisfy my sweet tooth I make Lava Cakes :) I whip them up after dinner and they are ready in 15 minutes!
Last time I baked them I was feeling particularly sinful so I made a Rum flavored version of Lava Cakes, what can I say… here is how you can make them ;)
The specified amounts make 6 cupcake size lava cakes.
Ingredients
- scant 2/3 cup dark chocolate chips (100 gr)
- 4 tbs butter (50 gr)
- 2 eggs
- 1/4 cup sugar (60 gr)
- 2 tbs Rum (25 ml)
- 1 tbs+ 1 tsp flour (14 gr)
- 1 tbs unsweetened cocoa powder (6 gr)
Directions
Turn on the oven at 360°F (180°C).
Melt the chocolate chips in a microwave safe bowl for 1 minute at high power. Some of the chocolate chips will be melted other will not but there is no need to melt in the microwave any longer, just stir for a couple of minutes (Picture 1) and you will have the best melted chocolate you have ever seen, and without using a double boiler.
Melt the butter in a microwave safe bowl for 30 seconds.
Mix the eggs with sugar using an electric mixer until they are white and fluffy, about 5 minutes (Picture 2).
Add to the egg mixture the melted chocolate, butter and rum, and mix well.
Add the flour and cocoa powder sifted together. Mix well.
Pour into a cupcake pan lined with cupcake liners (Picture 3) or buttered and floured.
Bake for 12 minutes (Picture 4), or even less for a higher flowing lava effect :)
Eat immediately to obtain the lava effect or enjoy the next day, reheating them in the microwave for 8-10 seconds.

Haha, no seaweed in these little cakes. “Lava” refers to the flow of melted chocolate that erupts from the core of the cake when you spoon the first bite :)
