This souvlaki recipe completes the Greek weekend, and your meal if you are like me and once you pick a country for your lunch/dinner you stick to it :P check out yesterday’s recipe Tzaziki and enjoy!
Souvlaki is easy to make and very flavorful due to the marinade the meat is soaked in before grilling.
With the following ingredients you can make 4 skewers, about 3-4 portions.
Ingredients
- 1 1/2 lb to 2 lb pork loin or tenderloin (800 gr to 1 kg)
- juice of 4 lemons
- 1/2 cup olive oil (125 ml)
- oregano
- salt
- black pepper
Directions
Cut the pork into 1 inch (2.5 cm) cubes.
Transfer the cubes in an oven dish where they can be laid in a single layer and coat with olive oil, salt pepper and abundant oregano (picture 1). Pour the lemon juice, mix well and marinate for 30 minutes (picture 2).
You should never use a metal pan for acid marinades, the ones made with lemon or vinegar for example, because the acid will react with the metal. I use a pyrex dish.
Thread the marinated pork cubes onto skewers (picture 3) and grill for 15 minutes or until done, turning once (picture 4). If you are going to use wooden or bamboo skewers you may want to soak them in water for about 30 minutes to prevent the exposed parts from catching fire.
Grill some pita bread when the meat is almost done (picture 5). Serve your souvlaki with the warm pita and a side of vegetables or tzatziki.
