We all should eat more fish. I personally like it but my problem is that I don’t know many ways to prepare it so I easily get bored of eating fish.
We happened to find some cheap local tilapia some time ago and we decided to make it in a simple way with the usual salt, black pepper and lemon, but we gave it a little twist using small key limes, they are so tasty!! I accompanied the tilapia with long grain rice and I flavored the rice with some lime juice: delicious!
The following portions are for 2 servings
- 2 tilapia fillets
- freshly cracked black pepper
- 2 key limes (small green limes)
- 2 tbs butter
- 1/2 cup long grain rice
- 1/4 tsp cumin seeds
- 1 tbs butter
- 1/2 tsp salt
- 3/4 cup water
Preheat the oven to 380F (190C).
Wash and pat dry the tilapia fillets.
Lightly butter a cast iron pan and place the tilapia fillets in it. Sprinkle the fillets with salt and black pepper, grate the zest of one lime over the fillets, then halve the lime and squeeze the juice on the fillets.
Cut 2 tbs of butter in thin slices and place over the tilapia fillets.
Bake for 20-25 minutes.
Meanwhile prepare the rice. Melt 1 tbs butter in a pan, add the cumin seeds, wait for 2 minutes than add the rice, the water and the salt, cook for the time suggested on the package. Or if you own a rice cooker: toss rice, water, salt, cumin seeds and butter in the rice cooker, turn it on and enjoy your free time while it does its job ;)
When the rice is done plate it, sprinkle each portion with the juice of 1/2 key lime and place the tilapia fillet over the rice.
