Goat Cheese Jalapeno Crostini need I say more? These crostini are WONDERFUL!! I made them for a number of guests and everyone enjoyed them a lot :) They are my new party favorite!
They are super easy to make, quite quick, and the topping can be made in advance. Actually if you make it in advance it will be even more flavorful. Also they will keep well in the refrigerator, just reheat them quickly in the oven, they will conserve the same flavor and be nicely crispy as if you just baked them. These goat cheese jalapeno crostini are great warm as well as at room temperature. Have I convinced you? I’d say you should try these babies ;)
- 1 large jalapeno
- 8 oz (1 small package) cream cheese (225 gr)
- 4 oz goat cheese (113 gr)
- 2 tbs olive oil
- 2 key limes, the small limes (or 1/2 lemon)
- salt and pepper to taste
- 2 french baguettes
- olive oil to brush the bread
Prepare the cheese spread first, make the spread in advance for additional flavor.
Chop the jalapeno thinly, removing the seeds if you don’t wish your spread to be spicy.
Using a hand mixer or a spoon, work together the cream cheese, the goat cheese, the olive oil, the juice of 2 small key limes, the chopped jalapeno and a pinch or two of salt and black pepper to taste.
Prepare the bread slicing the baguette in thin diagonal slices, less than 1/4″ (0.5 cm) is ideal. Brush the slices on both sides with olive oil, spread on oven pans and broil on both sides until crispy.
Spread the cheese on the slices of bread and broil again until the cheese is bubbly. I used a pastry bag to top the slices of bread with the cheese spread and that made the work much easier, spreading hot slices of brad can be a pain x|
… in the pics the cheese on my crostini doesn’t look very bubbly… that is because I baked them instead of broiling… broiling is the right thing to do ;)
