Summer is just around the corner and at the market I start to see summery fruit and vegetables :) This morning I stumbled upon really long and good looking German cucumbers and I though they were going to be just great for a little appetizer to bring to a cocktail party our friends threw to celebrate the Diamond Jubilee of Queen Elizabeth II.
So here is the easy recipe for these flavorful cucumber slices. A perfect finger food party dish. With the following ingredients you will obtain enough cheese topping for about 20-25 slices.

Ingredients
- 1 cucumber
- 100 gr cream cheese
- 1 tbs olive oil
- 10 basil leaves
- a pinch of salt
Directions
Wash and peel the cucumber. Cut it into slices and lay them on a serving dish.
In a food processor mix the cream cheese with the olive oli, salt and basil leaves roughly cut, until everything is well amalgamated and pureed.
Transfer the cheese to a pastry bag and squeeze on top of the cucumber slices.
Keep in the fridge until it is time to serve.
