I gave you the recipe for ragu, bolognese sauce, and now I have to give you at least one recipe for how to use it. You know you can use it straight from the pot as a dressing for pasta, but let’s elaborate on that and make a delicious pasta al forno, oven baked pasta.
This is comfort food the Italian way, easy, filling and tasty oh so tasty.
The following ingredients are for 4 persons.
- 350 gr of pasta, preferably tortiglioni
- 8 heaping tbs of ragù, bolognese sauce
- parmesan cheese
- 500 ml besciamella sauce:
- 60 gr butter
- 50 gr flour
- 500 ml milk
- 1/2 tsp salt
- nutmeg to taste
Start by preparing the besciamella, bechamel sauce. If you have a microwave: use it! It makes preparing besciamella super fast. Here is the recipe with directions for Besciamella Sauce both in the microwave and on the stove.
Assuming that your ragu is ready (if not look up the recipe for bolognese sauce here), add it to the sauce pan where you made besciamella and stir it in.
Now go ahead boil the pasta in abundant salted water. Cook the pasta for a couple of minutes less than the time on the package, it will go in the oven and cook some more.
Drain the pasta, bring back to the pot, add the ragu and the besciamella sauce. Stir well.
Butter a square 8-inch (20 cm) backing dish (I use pyrex or ceramic). Pour into the dish the pasta well coated in the sauce. Dust with freshly grated parmesan cheese and transfer to the oven. Bake for 20 minutes at 360ºF (180ºC).
Cut into square portions and serve.
